Course Details

  • Short course (16 weeks) one evening per week, 5-8pm Mondays.
  • This course will have two starting points as it will run for 16 weeks between September to January and 16 weeks between January and June.

  • Gain practical skills and move on to higher level courses in patisserie and confectionary.

  • Note: this is a free course which is for learners aged 19+ only (for under 19s interested in this course, please view the Culinary Skills Diploma as it will also cover this content).

What to expect from the course

Free course for Adults aged 19+. Taught by Paul Hollywood's former boss!

This is an ideal course for those who wish to enhance their basic skills and knowledge for professional development or for those who just enjoy cooking and baking at home.

If you love the 'Great British Bake Off', and let's face it, who doesn't - then this is the course for you. You will be taught by Siobhan Sweet who was Paul Hollywood's boss during his time at the Chester Grosvenor!

This course is highly practical and our students leave the college well prepared to start a career in one of the world’s fastest growing industries after having enjoyed a substantial taste of it. You'll gain practical skills and valuable experience working in our superb training facilities.

This course comprises an evening practical class running on a Monday from 5-8pm.

You will work with a variety of tools and equipment to gain skills and knowledge across a selection of these practical units:

• Fermented Goods - Chelsea buns, doughnuts, bread rolls, fruit loaf and focaccia.
• Pastes - short, sweet, choux, suet and puff pastry.
• Hot and Cold Desserts - summer puddings, trifles, crème caramels, panacotta, bavarois, posset, sponge puddings.
• Biscuits, Cakes and Sponge Products - Victoria Sponge, Madeira, cookies, scones, shortbread, brownies, Genoese, cupcakes and many more.

This is a specialist, bespoke course for aspiring pastry chefs, patissiers, home bakers and entrepreneurs who may wish to set up their own business or just want to learn more about pastry and baking. Academy Bakery

The Academy Bakery is located on the Duke Street campus, producing a range of first class baked goods daily. These include artisan breads, patisserie and biscuits, as well as special occasion/novelty cakes by award-winning master-bakers. Students are offered a range of discounts throughout the year.

Academy Restaurant

Duke Street campus is also home to the College’s Academy Restaurant. Often referred to by it’s customers as Liverpool’s hidden gem, the restaurant serves top class cuisine, at highly competitive prices. Food is expertly prepared by professional chef/tutors and young chefs in training and offers students a range of discounts at different times of the year.

When you become a student of the College you’ll receive full access to Microsoft Office 365. This allows you to install the software on your own computer and other devices at home, completely free of charge.

The college has excellent sports and fitness facilities at its Roscoe Street campus. Students pay a one-off membership fee for all year round usage of weekly supervised gym sessions, as well as access to a number of sporting clubs and events.

Entry Requirements

You must be aged 19 or over. This course is suitable for complete beginners. Students will require a reasonable level of written English.

This course is only available to learners aged 19 and over.
If you are unemployed or earning less than £33,958.60 a year? You may qualify to join this course for free.
